iPhone: iOS 27.3 arrives in December, what will really work in Europe?

Apple released the first test version of iOS 27.3 on Tuesday, November 3, and the specialist site MacRumors calls it the biggest iOS 27 update since its release in September. Siri unsubscribing you from newsletters, Safari darkening sites that are too white, a Health app giving you a “health age”… On paper, it sounds tempting.

Except that some of these new features won't make it across the border, and not the least important ones.

On a wooden kitchen table, a hand holds an iPhone whose dark screen displays a gear, a progress bar and the words “Update in progress”, with a candle, blurred string lights and a mug of hot chocolate in the background

iOS 27.3 has been in testing since November 3, the version for everyone is expected in December

The big one: Siri learns dozens of new gestures

The new Siri, the one that really understands what you ask it, is gaining a long list of actions in Apple's apps. A few examples spotted by MacRumors:

  • in Mail, unsubscribe you from a mailing list, or cancel an email that you just sent a little too quickly;
  • in Safari, clear your history, save an article for later, or close all duplicate tabs;
  • in Files, delete what you haven't opened in a while;
  • in Weather, add a city or set alerts.

And you can ask it what it can do in each app. Handy, because nobody will read the full list.

Bad news: not on your European iPhone

Here's the catch. This new Siri is still not available in the European Union on iPhone, iPad and Apple Watch. I explained it a month and a half ago, on the day iOS 27 came out, and nothing has changed since then: Apple and the European Commission don't agree on how to apply European competition rules to this assistant, and Apple still isn't giving any date. No, the European Commission would rather hold meetings about plastic bottle caps that can't be detached!

The most annoying thing is that it has spoken French since 27.2, released on October 26. But you need an Apple account outside the European Union. An iPhone set to French and sold in Brussels is therefore not entitled to it. Only the Mac is an exception, according to several specialist sites, go figure why not on the iPhone but yes on the Mac. And in any case, you need at least an iPhone 15 Pro.

On a small road, a lowered red and white barrier separates a man holding his iPhone, looking envious, from a smartphone sitting on the booth at the border crossing, on the other side, glowing with a colorful halo from a voice assistant

What you'll really get: Safari, finally relaxing

Safari is getting an “adaptive” dark mode. You know that moment when you're reading peacefully in bed, your phone in dark mode, and you open a completely white site that blasts your eyes like a headlight straight in your face? Safari will now darken sites itself when they haven't provided a dark version. Your partner will thank you.

Two side-by-side photos of the same couple in bed at night: on the left, the woman reads a completely white site that dazzles her and wakes her grumpy partner; on the right, the same page appears in dark colors and the partner sleeps peacefully

Same page, same time, only one person awake instead of two

Two more new features in Safari. Vertical tabs first, on iPhone, iPad and Mac, arranged along the left side of the screen like in Edge or Arc browsers, with just the little site icons to save space. It's mostly useful on iPad and Mac, where you always end up with forty tabs open. The option will be found in Safari's settings, and the bar can expand to show the page title. And a "Global Privacy Control" option: a signal your browser sends to every site to tell it that you refuse to let it sell or share your data. Serious sites respect it. The others, as usual, pretend not to hear it. It costs nothing to turn it on when the update arrives.

The Health app gives you an age, and it might not be yours

The redesigned Health app is back, after being tested and then removed from 27.2 at the last moment. It gains an "Insights" tab, which brings together your activity rings, your heart and your sleep, and especially a "Longevity" tab. This one rates seven areas: heart, sleep, mood, mobility, metabolism, hearing and nutrition.

And it calculates a "health age", by comparing your measurements (resting heart rate, sleep, ability to exercise, blood test results if you enter them) with your real age. I can already picture the family meals: "According to my iPhone, I'm 38", with his 52 years. I didn't find any information about this tab's availability in Europe, so be careful.

The little extras

StandBy mode, that clock display when the iPhone is charging lying on its side, gets the new watch faces launched with the iPhone Duo: more colors, a Calendar face, a Weather face, and several versions of each that you swipe between. And it's for all iPhones running iOS 27, so from the iPhone 11 onward.

In Control Center, the VPN button can now switch from one VPN to another, for those who have one for work and one for home. And Apple Music is launching "Selfie Sing": you choose a song in karaoke mode, tap the camera icon, and the iPhone films your performance, with tools to modify your voice before sharing it.

In the evening in a kitchen, a father in his forties passionately sings into a wooden spoon as a microphone, filming himself with his iPhone propped against the fruit bowl, while his teenage daughter hides her face in the doorway

One last detail, on the Freeform side, Apple's whiteboard app: it can now draw a shape from a written description. But only for Apple Creator Studio subscribers. Apple stays Apple.

When is it coming?

For now, it's a test version reserved for developers. According to MacRumors, the version for everyone will come out in December, after several rounds of testing. My advice: don't install the test version on your main phone, a beta crashes, and that's normal. To be sure you don't receive it by mistake, go to Settings, General, Software Update, and check that "Beta Updates" is set to Off. Then wait for the December notification.

For me, this 27.3 is a good update, even with Siri cut out of it. Adaptive dark mode alone is going to help quite a few couples. But seeing a Siri that speaks French and can't answer in French in Brussels, I find that downright infuriating. Apple and especially Europe, get your act together before our iPhones retire!
